I, like you, would choose W-S or Crate & Barrel. And maybe Starbucks or Coffee Bean, as long as I didn't have to work the uber-busy morning shift. There's something calming and freeing about doing a repetitive-task type of job like making coffee drinks one right after the other. Plus, I'd like listening to the music all day, and I think it would generate a lot of good karma to hand people steaming cups of liquid joy.
Oooo! C&B is a good one...A variety of things from kitchen to housewares to furniture, and all of it pretty reasonably priced so with a discount it becomes even more reasonably priced...Is it too late to switch? Or maybe next year I'll do C&B. (Or someone else can get a job this holiday at C&B and I can benefit from the discount. :-)
I would probably choose Sur la Table first, then WS, C&B, and if it wasn't for the discount, but merely a cool minimum wage job for the environment, I'd be a barista somewhere. Or perhaps work at a wine bar.
I would pick Anthropologie...I've done retail and things about it totally blow but that is where I would most want the discount. I would surely leave at the end of the day already having spent my next 10 paychecks that were not yet earned. sigh... I heart anthro.

NEVER, in 1 million years would I choose to work:
1.) In clothing retail
2.) As a food server
