Share the love

There are a lot of recipes out there. Especially here; one of my two favorite places to search online. (The other is here, in case you were curious.)

But I want to hear about your favorite recipes that are made using a food processor. You see, I have a new toy, and it's yet to be christened. I'm hoping this weekend.

So all can share in your infinite culinary wisdom, please post any recipe/s you have in the comments section.

I've only used mine a couple of times since I got it, and I think the first time I did was when I made baked apple dumpling pie, which I reviewed on my blog (http://spaceladysplanet.blogspot.com/2007/04/recipe-review-baked-apple-dumpling-pie.html). I'd be curious to know some other recipes that utilize the Cuisinart, too, especially a fresh salsa recipe if anyone has one.

Here's one from my co-worker Melissa. If I had a food processor, I would make this one too! (I wonder if it would work in a blender...

melissa's pasta al pesto

1/4 cup pignoli (pine nuts)
3 garlic cloves
3 cups fresh basil leaves (rinsed, stems removed)
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 cup olive oil (depending on what consistency you like, you may add more or less)
1 cup freshly grated parmesan (i take a large wedge, cut it into cubes, and toss it into the food processor with the rest of the ingredients)

put the basil leaves, garlic, salt, and pepper in the bowl of a food processor fitted with a steel blade. process for 15 seconds. add the pignoli and half the parmesan (if cubed; add all of the parmesan if already ground) with the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is thoroughly pureed. if using cubes of parmesan, add the remainder and puree for a minute. use right away or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.

while i like to mix my pesto in with some pasta (and garnish with a few toasted pine nuts), i also love to place dollops of it atop grilled chicken breasts. pesto is also great on a rustic focaccia sandwich full of roasted vegetables and thick slices of provolone. yum!
