I don't actually like coconut cake, but I think it's pretty, all the flaky coconut pieces sticking to the frosting.

I used to detest coconut, and I still don't really like it EXCEPT when it's in the form of cake. YUM. It looks fabulous.

Yes, I made it for a friend's birthday in May (just uploaded the pic ;-)...It was fun to make; the cocounut flakes make it easy to be whimsicle & pretty. I'm hearing from several people how it's their "favorite" type of cake and yet I never hear people talk about it. Funny.
I'll try to be better about blogging. :-D
